#HotSummerEats Sweet Garlic and Herb Grilled Chicken

Welcome to day 3 for #HotSummerEats! 

Marinated and grilled chicken is a fantastic recipe for a family and budget friendly meal. In our house, we love to play around with different flavor combinations for our chicken breasts. Grilled chicken is one of Kellen's favorite things to eat for dinner, and he loved the different flavors we get from various marinades. I decided that I couldn't possible post on different summer recipes and leave out one of our weeknight staples!

T.Lish creates all natural and extremely versatile dressings, marinades and sauces.  T.Lish generously sent us 3 different dressing/marinates for this challenge: Sweet Garlic, Asian Sesame, and Chipotle. I wish I was able to share a recipe for each one in this challenge because all three are amazing! For this recipe, I opted to use the Sweet Garlic marinade. I really really liked this marinate and wish I had more! It is sweet, but the garlic flavor is very strong, but somehow does not become overpowering. I knew it would be amazing with chicken and give me flavorful, tender and juicy meat. I am excited to try the other marinates this summer and will post when I do.... I am thinking that the chipotle will make incredible grilled steak fajitas!

I combined the flavors from T.Lish and Gourmet Garden to create an absolutely delicious chicken dish! My little guy loved this and ate almost an entire chicken breast on his own. I also love that this recipe is easy and quick enough for a weeknight and that helps a busy household like ours!

Ingredients

4 boneless skinless chicken breasts

1 bottle T.Lish Sweet Garlic Dressing/Marinade
1/2 Tbl Dijon mustard
1 1/2 Tbl Gourmet Garden Lightly Dried Parsley
1 Tbl Gourmet Garden Lightly Dried Basil
1 tsp Gourmet Garden Stir-in Garlic Paste

Instructions

In a medium bowl, whisk together marinade, mustard and herbs. Place chicken in a large resealable plastic bag. Pour in the marinade and toss to coat.  Allow chicken to marinate for at least 6 hours. 

Remove chicken from marinade and discard excess. 

Heat grill to medium heat. Remove chicken from marinate and grill chicken 3-5 minutes per side or until no longer pink (this will depend on size and thickness of the chicken breast).  Remove from grill and serve immediately.
